Cross-Classification Analysis of Food Products Based on Nutritional Quality and Degree of Processing

This study aims to compare the classification of foods available in Portuguese market using Nutri-Score and NOVA classifications analyse their ability discriminate fat, saturated sugar, salt content foods. A sample 2682 food products was collected. The nutritional quality established Nutri-Score, classifying them into five categories (from E). used classify according degree processing unprocessed/minimally processed foods, culinary ingredients, ultra-processed (UPF). classified a Multiple Traffic Light label system. It observed that 73.7% UPF were as C, D, E, 10.1% A, 16.2% B. positively correlated with (ρ = 0.140, p < 0.001) Lights system (ρTotal Fat 0.572, ρSaturated 0.668, ρSugar 0.215, ρSalt 0.321, 0.001). negatively for total fat −0.064, Our findings indicate presence many UPFs all categories. Since are complementary, both should be considered labelling.
